
My mom and sister are in town this weekend and they are always healthy eaters. I tried to make meals that would suit their tastes and just choose the things that I know are healthy. For breakfast this
Saturday I chose to make low sodium bacon and only eat one mini biscuit and some scrabbled eggs. I didn't not put butter or jam on my
biscuits either. I just have to take it one day at a time and just start making smarter choices.

This was dinner that I made Friday night. It was spinach and
Gouda stuffed chicken, green beans, pasta and rolls. I did not eat any pasta but I did eat half a roll. I also chose not to eat the skin on my chicken (it was baked by the way) but I did eat lots of green beans and had iced tea with
splenda. It was a delicious dinner.

I think this week the choice that I want to make is to eat 3 veggies and 2 fruits a day. I know that's kind of a huge change if you aren't used to it but I'm hoping that by doing this it will make me fuller of the healthier things and not eating the unhealthy things as much.
It's a marathon not a sprint. Just taking one step at a time.
